Love avocado? Love curry? Try these chicken tikka stuffed avocados! They are super impressive and taste great – and if you use pre-cooked chicken there is no cooking time! Winner.
The curry mix actually has a reminiscent taste of Coronation Chicken – any fans out there? I’m a huge fan of Coronation Chicken, and I did weigh up calling this dish Coronation Chicken Stuffed Avocados. The curry mixture definitely has a similar taste – given the raisins and curry powder. However I was worried about the authenticity given that I used tikka curry powder rather than the generic yellow curry powder demanded. Traditionally apricots are also used rather than raisins or sultanas. Anyway, this has definitely got a similar taste so if you like Coronation Chicken I would say this would be a winner for you.
This is a filling lunch, with the mixture of avocado and protein from the chicken. It’s not particularly low in calories, but it’s pretty healthy. You could easily reduce the portion size by having a half stuffed avocado – if you want a smaller lunch or snack.
The mixture will keep a for 2-3 days in the fridge so – as per most of my recipes – preparing this for a couple of portions and simply putting the ingredients together when you need them is a great solution to a busy lifestyle.

Ingredients
100g chicken breast – cooked and shredded (or you can use pre-cooked chicken for ease)
10g chopped raisins
8g chopped walnuts
25g celery – diced small
10g finely diced red onion
50g low fat natural yogurt
1 tsp tikka curry powder
1 medium avocado – halved
Directions
- Prepare all the ingredients as described above and mix everything aside from the avocado together in a large mixing bowl.
- Halve the avocado and remove the stone. Use a spoon to scoop a little of the flesh out and widen the crater where the stone was.
- Add the chicken mixture to the hollow in the avocado and serve!
