Refreshing, sweet and simple – this easiest ever mojito recipe is perfect for summer BBQ’s and sundowner cocktails. Plus, it takes mere minutes to create!
Makes one cocktail
Ingredients
- 10 fresh mint leaves
- 1 tsp white sugar
- 1 lime, juiced
- 1 cup ice cubes
- 50ml white rum
- 100ml club soda
Instructions
1. In a cocktail shaker add the mint leaves, the lime juice and use a cocktail muddler to ‘muddle the mint’. This means to lightly press the mint a few times so that it releases the flavours. You don’t want to bash it into obscurity leaving soggy, limp mint because that isn’t going to look good can actually make it bitter. If you don’t have a muddler then you can use the end of a rolling pin or the bottom of a wooden spoon handle.
2. Add the rum and the ice into the shaker, place the lid and shake well for around 10-15 seconds. (see notes)
3. Pour into a glass and fill the glass with some soda water – use as much or as little as you prefer to taste.
4. Serve with some extra mint to garnish
Notes
- While you can use plain old ice cubes for this, I like to use crushed ice or pebbled ice
- If you don’t have a cocktail shaker then there really is no reason why you can’t use a pint glass (although the metal from the cocktail mixer will make the drink colder – it won’t be that noticeable). Use a coaster and VERY firmly hold it over the top when shaking.
