Goat’s Cheese Tart

Description

Impressive, tasty and satisfying. This Goat’s cheese tart is super versatile. Make it as a starter, for lunch or as a side.


Ingredients

Scale
  • flour, for dusting
  • 200g / 7oz ready-made puff pastry
  • 4 tbsp red onion marmalade/chutney
  • 100g / 3.5oz cherry tomatoes, halved (around 6-8)
  • 80g / 3oz goat’s cheese
  • few sprigs of fresh thyme
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 200C/400F. 
  • Roll the pastry on a floured surface until you have a large rectangle, around 35cm x 20cm / 14-inch x 8-inch. Use a table knife to score a rectangle inside the pastry, around 2.5cm away from the edge. Use a fork to prick the inside of the rectangle you have just scored all over. 
  • Line a wire baking rack with parchment paper and then dust a little flour over the top. Carefully place the pastry on top. 
  • Spread the red onion marmalade evenly inside the scored rectangle. 
  • Place the cherry tomatoes and goat’s cheese on top of the red onion marmalade, evenly spacing them out. Scatter over the thyme and add some salt and cracked black pepper over the top. 
  • Use a pastry brush to brush the edges of the tart with the olive oil and place in the oven for 15-20 minutes or until the pastry has risen and is golden brown around the edges.

Notes

  1. You can use a standard baking tray to bake the tart, however, using a wire rack helps the heat to distribute under the tart resulting in a crisper base. 
  2. Use multi-coloured cherry tomatoes if you can to add extra visual appeal. 
  3. Make sure to buy the goat’s cheese in a ‘log’. Spreadable cheese won’t really work as well here. 
  4. Although fresh thyme works best, in a pinch you can use 1 tsp dried thyme.
