Lemon baby potato salad

This is one of my go to side dishes – it’s so easy to prepare and you only really need to use one bowl (to mix) and one pan. This simple lemon baby potato salad contains garlic and a touch of mustard to add subtle flavour.

The potatoes are really really tasty but the flavour isn’t so overpowering that you can’t pair it fairly easily with most meat or fish dishes. They also look great, so you can easily add it to your repertoire when entertaining.

They also go well with a roast chicken, as a lighter touch to traditional roast potatoes.

You can easily prepare these potatoes and eat them cold, or reheat in a microwave – making it perfect for prepping a couple of portions at once to eat over a couple of days. They should keep for 2-3 days in the fridge.

Citrus and herb potatoes with a touch of garlic and mustard – super easy to pair with so many dishes

Ingredients

  • 175g baby potatoes, halved

  • 20g spring onions, sliced on the diagonal

  • Small handful parsley, finely chopped

  • 1 clove garlic, minced

  • 1/2 tsp dijon mustard

  • 1 tsp olive oil

  • 1 tsp lemon juice

Directions

  • Bring a small pan of water to the boil and then add the potatoes. Cook for 10-15 minutes depending on the size.
  • Mix together all other ingredients in a bowl,
  • Once the potatoes are done, drain them and then add to the bowl and mix well with the other ingredients.
  • Ta da – super easy, and simple!
