Minted Peas

Description

This minted peas recipe is unbelievably easy. Using only 3 ingredients, you can have this ready in less than 10 minutes. The perfect accompaniment to lamb, beef or even fish. 

The default recipe makes one generous side dish. 


Ingredients

Scale
  • 100g (3.5oz or 3/4 cup) frozen peas
  • 810 mint leaves, roughly chopped
  • 1 tbsp unsalted butter

Instructions

  1. Bring a small pan of water to the boil. Add the peas and cook for 4 minutes. 
  2. Drain the peas and add back to the pan, return to the hob and reduce the heat to low. 
  3. Add the butter and mint and stir together until the butter is fully melted and coating the peas. Season to taste and serve.

Notes

  • Don’t add salt to the water you boil the peas in – as this can cause the peas to toughen up
  • You can add a little lemon zest for an added hint of citrus
  • You can also eat these cold for a great summery  side dish, or an addition to a salad
