Description
This minted peas recipe is unbelievably easy. Using only 3 ingredients, you can have this ready in less than 10 minutes. The perfect accompaniment to lamb, beef or even fish.
The default recipe makes one generous side dish.
Ingredients
Scale
- 100g (3.5oz or 3/4 cup) frozen peas
- 8–10 mint leaves, roughly chopped
- 1 tbsp unsalted butter
Instructions
- Bring a small pan of water to the boil. Add the peas and cook for 4 minutes.
- Drain the peas and add back to the pan, return to the hob and reduce the heat to low.
- Add the butter and mint and stir together until the butter is fully melted and coating the peas. Season to taste and serve.
Notes
- Don’t add salt to the water you boil the peas in – as this can cause the peas to toughen up
- You can add a little lemon zest for an added hint of citrus
- You can also eat these cold for a great summery side dish, or an addition to a salad
