Pea and Ham Soup

  • Author: caroline

Hearty and delicious, this pea and ham soup is easy to make & perfect for a light lunch or starter. It uses pre-cooked ham to make it super quick and easy.

The default recipe serves 2.

  • 1 tbsp olive oil
  • 1 large onion
  • 400ml / 1.7 cups vegetable stock
  • 1 tbsp lemon juice
  • 300g / 10.5oz frozen peas (see note 1)
  • 1 tbsp roughly chopped mint leaves
  • 2 tsp horseradish
  • 80g shredded ham hock or thick-sliced ham cut into small strips
  • Single cream and olive oil to garnish

  1. Heat the oil in a large saucepan over medium-high heat. Add the onion and saute for around 5 minutes until softened.
  2. Pour in the stock and lemon juice.
  3. Increase the heat to high and when the stock starts to boil add the peas. Bring back to the boil and cook for a further minute.
  4. Remove the pan from the heat and stir in the mint, horseradish and 2/3rds of the ham.
  5. Use an immersion blender to blend the soup, or pour into a blender and blitz, until you have a smooth consistency. Season to taste.
  6. Serve in bowls with cream and olive oil drizzled over the top and the extra ham piled in the center.

  1. You can use fresh peas instead of frozen. If you buy fresh peas in the pod then you will need to buy around 3x more in weight than if using frozen shelled peas.
  2. If you are using fresh peas you will need to increase the cooking time to around 5 minutes.
  3. A standard blender will give the smoothest soup, while an immersion blender will give a great result that is a little rougher. A food processor will give a chunkier result.
  4. Leftovers can be kept in the fridge for up to 3 days. The soup can also be frozen for up to 3 months. Defrost thoroughly before reheating on the hob/stove or in the microwave.
