Pea and Mint Soup

Description

This pea and mint soup is unbelievably tasty and fresh. A perfect light meal for the summer. It’s also one of the quickest soups you will ever make!

The default recipe serves 2


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 large onion
  • 400ml 1.7 cups vegetable stock
  • 1 tbsp lemon juice
  • 300g / 10.5oz frozen peas (see note 1)
  • 2 tbsp roughly chopped mint leaves
  • Single cream and olive oil to garnish

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Add the onion and saute for around 5 minutes until softened.
  2. Pour in the stock and lemon juice.
  3. Increase the heat to high and when the mixture starts to boil add the peas. Bring back to the boil and cook for a further minute. (see note 2)
  4. Remove the pan from the heat and stir in the mint.
  5. Use an immersion blender to blend the soup or pour into a blender and blitz until you have a smooth consistency. Season to taste.
  6. Serve in bowls with cream and olive oil drizzled over the top.

Notes

  1. You can use fresh peas instead of frozen. If you buy fresh peas in the pod then you will need to buy around 3x more in weight than if using frozen shelled peas.
  2. If you are using fresh peas you will need to increase the cooking time to around 5 minutes.
  3. A standard blender will give the smoothest soup, while an immersion blender will give a great result that is a little rougher. A food processor will give a chunkier result.
  4. Leftovers can be kept in the fridge for up to 3 days. The soup can also be frozen for up to 3 months. Defrost thoroughly before reheating on the hob/stove or in the microwave.
