Tenderstem broccoli is one of my favourite vegetables. It baffles me though… while I love standard broccoli, I love this a disproportionate mount more… Why is that? Is it the texture? The flavour is, after all, pretty similar. This roasted tenderstem broccoli with garlic is so simple and easy to make, yet unbelievably delicious. It’s a real crowd pleaser too if you have people over – you can serve it on a fancy plate and it looks really elegant!
Tenderstem broccoli for one
Given the 10 minute cooking time, and the fact it is only 3 ingredients, this is a great dish to cook for one as it requires minimal forward planning. It’s also a great vegetable to keep in the crisper drawer to whip up as a side dish.
How to roast tenderstem broccoli
Roasting tenderstem broccoli couldn’t be easier. Simply wash and pat dry and then place on a baking tray, drizzle with oil and season well. Roll it around a little in the oil so it’s lightly coated and place in the middle of a preheated oven (200C / 400F) for 10-12 minutes depending on how cooked you like it (10 minutes should be enough for al dente – for a standard-sized piece).
This broccoli is flavoured with garlic – simply thinly slice garlic cloves and then scatter over before drizzling with the oil. The garlic flavour infuses into the broccoli and the pieces of garlic become nice and crispy which are unbelievably tasty!
Can you reheat it?
While nothing beats this made fresh, it can be reheated if you have to. Either reheat in the oven or in the microwave for around 1 minute in a large bowl with a plate over the top.
If you know at the time of cooking that you are going to be reheating this then I recommend reducing the cooking time by a couple of minutes – to stop it overcooking and becoming mushy when you reheat.

Roasted Tenderstem Broccoli with Garlic

Description
Delicious roasted tenderstem broccoli with garlic. An impressive & delicious addition to any dinner table or plate – great for one or a crowd.
Ingredients
- 100g tenderstem broccoli
- 1 – 2 garlic cloves, thinly sliced (see note 1)
- 1 tsp olive oil
Instructions
1. Preheat the oven to 200C / 400F.
2. Line a baking tray with parchment / baking paper. Spread the broccoli over the tray and drizzle with the olive oil and scatter over the garlic. Lightly roll the broccoli in the oil to coat.
3. Place in the oven for 10-12 minutes. 10 minutes should give a great, al dente texture. Leave a few minutes longer if you prefer it softer.
Notes
- If you love garlic (like me) then use 2 cloves. It goes irresistibly crispy and delicious in the oven.
