Smoked Salmon & Avocado

Description

This smoked salmon and avocado starter is so delectable. It’s a treat for the stomach and the eyes! Perfect for a special occasion or when you’ve got guests to impress – it’s quick to prepare and can be made a few hours in advance! 

The default recipe makes one stack


Ingredients

Scale
  • 50g smoked salmon
  • 1/4 tsp black sesame seeds
  • 1/2 tsp dijon mustard
  • 1 tsp lemon juice
  • 2 sprigs dill
  • 1/2 avocado
  • small handful rocket / arugula

For the gremolata:

  • 1 tsp extra virgin olive oil
  • 1/4 lemon – zest only
  • 2 sprigs parsley, finely chopped

Equipment

1 small food presentation ring (3 inch diameter) – or you can use a food tin with both ends removed


Instructions

  1. Make the gremolata by very, very finely chopping the parsley and then mixing with the olive oil and lemon zest. Set aside to infuse.
  2. Chop the smoked salmon into small pieces and finely chop the dill. Place in a bowl with the dijon mustard and sesame seeds and season well. Mix together. 
  3. Dice the avocado into small cubes and tip over the lemon juice.  Place the food presentation ring on a plate and spoon in the avocado. Gently press down. 
  4. Place the smoked salmon on top of the avocado. At this point, you can place them in the fridge for a couple of hours until you are ready to serve them. 
  5. When serving mix the rocket with a small splash of olive oil and some cracked black pepper. Carefully remove the food ring and gently create a ball of rocket/arugula in your hands. Arrange the rocket on top of the stack. Drizzle the gremolata around the plate. 

Notes

  1. If you want to go the extra mile you can also add some microgreens on top of the stack
  2. If preparing in advance you may want to add a little extra lemon juice to the avocado as this helps stop it turning brown
