Description
Delicious, satisfying and easy – these vegetarian fajitas include protein packed black beans, sizzled with pepper and onion in Mexican spices.
Ingredients

- 1 tsp olive oil
- 1/2 red onion (around 50 g), cut into eights
- 1/2 yellow pepper (around 100 g), cut into thick chunks
- 100g mushrooms, roughly sliced
- 2 tsp fajita seasoning
- 100g black beans
- small handful coriander, roughly chopped
- 2 medium tortilla wraps
- 2 tbsp guacamole
- 2 tbsp low fat sour cream
- 2 tbsp salsa
Instructions
1. Heat the oil in a large pan or wok over a medium high heat and, once hot, add the pepper, onion and mushrooms. Add the fajita seasoning and stir fry for around 5 minutes.
2. Add the black beans and cook for a further two minutes to heat through
3. Serve sizzling hot onto a plate with the tortilla wraps, guacamole, sour cream and salsa on the side – yum!
Notes
- If you don’t have any black beans then kidney beans are a good alternative
