Hi, I’m Caroline. Originally from the green shores of the UK, I’m now living in eternally sunny Dubai.

Over the last few years I’ve gotten into some ‘routines’ (read: rut) which have involved me working a hell of a lot and taking little time for myself. Working long hours in a stressful job meant that I tended to get home from a busy day with little energy or enthusiasm to cook. I mean, who can really be bothered to cook for one? It’s a lot of effort. Additionally, Dubai is the convenience capital, which makes sense given the stifling heat for half the year. Quickly nipping to the supermarket during the high heat of summer is an unpleasant feat, even if it is just a 10 minute walk away. As a result every. single. restaurant, cafe and fast food joint delivers and it’s extremely easy to get anything you want straight to your door.

In my past life back when I was at university, and for couple of years after, I was a chef. At the time it was a way to support myself during my studies while doing something that was fun, offered a better life skill than pulling pints and that I was actually passionate about. I love cooking. I love the experimentation, the creativity and the sense of reward that comes from planning something and then taking it through to a tangible, great looking, delicious meal. When I actually get down to it, I find cooking a good opportunity to de-stress – something that I’d pretty much forgotten over the last couple of years.

I never considered being a chef as a long term career choice for various reasons. I followed my goals into the space of digital marketing, which I have now been doing for over 13 years and love. However, I’m now at a stage where I want to address my eating choices and move towards a healthier lifestyle. Creating this blog is the perfect way for me to combine both my passions. I’m hoping that I can inspire and encourage other people who find themselves cooking for one most nights to step outside of their comfort zone and add some creativity to their menu. I’m also hoping to show that eating exciting, healthy meals for one doesn’t have to be laborious or time consuming.

  • Hi, great site, found it when looking for homemade Ice Magic recipe.

    I’d like to know if there is a reason you write “sole” instead of “soul”. Is it a mistake, or is it a play on words related to your feet, or the fish, sole?

      It is a play on words – the blog is geared towards cooking for one (as in a sole person) 🙂

      If you make the Ice Magic recipe I hope it goes well! So much nostalgia for me in that one

I have to say, I’m jealous of all the amazing food you must have available in France – but I know exactly how it is being an expat and craving some home comforts (and as a Brit, I definitely see curry being a home comfort!)
